mast brothers chocolates

Chocolates has always been, for me, just a sweet snack. Delicious yes, but nothing more. That is of course before my visits to the Cocoa growers in Cote d’Ivoire. After that, chocolate is no longer just a yummy treat wrapped in foil, but instead comes with a whole back story of growers who patiently tend for the crops, and ferment the beans, lay them out to dry before packing them, lovingly, and shipping them out to chocolate connoisseurs worldwide.

Mast Brothers Chocolates from Brooklyn, New York, obviously understands this process. They insist on taking over the production process from the grinding of the beans, making sure that they are involved from the start to the very end. The end result is chocolates that  go beyond merely tasting good, but one that encapsulates all the flavours and tastes…

The Selby has a great photo essay of the brothers at work. Worth a look or two for sure!
